Okay feta fans, this one is for you! This easy feta and tomato pasta went viral on tik tok and let me tell you what, it may be one of my new favorites! Lenny thought it was almost like a restaurant dish with the taste, if that makes sense, not your typical at home pasta taste. I’m leaving the recipe below! Let me know what you all think if you try it!
INGREDIENTS:
- Block feta cheese, recipe calls for a block of feta, my store was all sold out so I used the crumbled and I feel like it did just fine!
- grape tomatoes- I used two packages
- Choice of pasta- I used bowtie pasta
- Salt and Pepper
- Basil- recipe calls for basil although I don’t like it so I left it out
- Olive oil of choice
- garlic bread or a salad for a side
Pre heat oven to 400 degrees
In baking dish lay out tomatoes and cover them in olive oil!
Once they are completely covered in olive oil, add in your feta directly in the middle of the tomatoes! A block is obviously easier to set in but I just dumped the package of crumbles directly into the middle of the tomatoes! Drizzle more olive oil over the cheese! Just a tad, as you don’t want to too much oil at the end. Add salt and pepper and any other spices of choice over the tomatoes and cheese! Pop it into the oven for 30 minutes at 400 degrees!
While that is in the oven, start boiling your pasta! I used bowtie pasta but I’ve seen it done with spaghetti and linguine as well!
Once the pasta and the tomatoes and feta are done, take the tomatoes and feta out and smash the tomatoes with a fork, while mixing in the cheese! There are highlights on my instagram showing what I mean! Get that completely mixed, we added in a little more feta while mixing to our liking. Once the tomatoes are completely smashed, add in your pasta!
This is where you can add basil if you prefer, again we left it out but most add it on top or mix it in! It is so tasty and light!! It fulfilled us without making us feel super icky like sometimes pasta can make you feel! ENJOY!!!!
